
NPR has a great
interview up with Stephen Fried, author of the recently-published book
Appetite for America, a nonfiction account of the life of entrepreneur Fred Harvey. Harvey created the Harvey House chain of lunch rooms, restaurants, souvenir shops, and hotels, all of which served rail passengers heading into the American West. The NPR story includes a link to an excerpt from Fried's book and copies of two Harvey House recipes: "How to Make Coffee" and (much to my delight) something called "BULL FROGS SAUTE PROVENCAL".
